CREAM OF BROCCOLI AND CHEESE
SOUP
 
6 tbsp. butter
1 tbsp. finely chopped onion
5 tbsp. flour
1 c. chicken broth
2 c. milk
3/4 tsp. salt
Dash of pepper
1 (10 oz.) pkg. frozen broccoli, cooked (or fresh broccoli, cooked)
1 c. Shredded Cheddar cheese

Combine butter and onion; saute and then blend in flour. Gradually add broth, milk, salt, and pepper; stir until smooth. Let mixture thicken slightly. Stir occasionally. Add broccoli and cheese. Stir until cheese is melted and blended well with broccoli.
