EASY RED VELVET CAKE 
1 box yellow cake mix without pudding
Milk (substitute for water in cake mix)
2 tbsp. cocoa
1 tsp. vinegar
2 eggs (or amt. cake requires)
1 oz. red food coloring
1/2 c. vegetable oil

Preheat oven to 350 degrees. Mix ingredients thoroughly. Pour into 2 (8 inch) round pans or 1 (9 x 13 inch) pan. Bake 30 to 35 minutes until cake tests done. When cake is cool, frost with Cream Cheese Frosting.

CREAM CHEESE FROSTING:

1 box confectioners' sugar
1 (8 oz.) cream cheese, softened
1/2 c. butter, softened
1 tsp. vanilla
1 c. nuts, chopped (optional)

In a small mixing bowl, mix all ingredients thoroughly, spread over cake.
