CHEESY POTATO CASSEROLE 
2-2 1/2 lb. new red potatoes
Salt & pepper to taste
16 oz. sour cream
1 1/2-2 c. shredded Cheddar cheese
1 stick butter, cubed

Scrub and boil potatoes with skins on until tender. With skins on, cube into rectangular casserole dish. Add salt, pepper and butter. Mix together. Add half of cheese and sour cream; mix again. Top with remaining cheese and sour cream. Bake at 350 degrees until cheese has completely melted. Serves 6.
