LILLIAN'S RHUBARB MUFFINS 
1 1/4 c. brown sugar
1/2 c. vegetable oil
1 c. buttermilk
1/2 tsp. salt
1 tsp. baking powder
2 tsp. vanilla
1 egg
2 1/2 c. flour
1 tsp. baking soda
1 1/2 c. raw rhubarb, cut into sm. pieces

Mix sugar, oil, buttermilk, egg and vanilla; add dry ingredients and mix. Add rhubarb pieces. Mix well. Fill muffin tins (greased or cupcake papers) 3/4 full. Bake at 350 degrees for 20 minutes.

TOPPING:

1 tsp. cinnamon
1 tbsp. butter
1/2 c. sugar

Mix well. Sprinkle on top of each muffin before baking. May add nuts to topping or muffin mix.
