CREAM CHEESE COOKIES 
1/2 c. shortening
1 (3 oz.) pkg. cream cheese
1/3 c. granulated sugar
1/2 tsp. lemon extract
1 tsp. vanilla
2/3 c. oven-popped rice
1 c. sifted flour
1/2 tsp. salt
2 tsp. baking powder

Blend shortening, cheese and sugar. Add vanilla and lemon extract. Crush popped rice into fine crumbs, add to sifted ingredients. Combine with cheese mixture. Shape dough into ball. Place on lightly oiled cookie sheet, flatten with fork. Bake in moderate hot 375 degree oven 10 to 15 minutes. Makes 4 dozen cookies 1 1/2 inches in diameter.
