HONEY WHEAT CORNBREAD 
1 c. cornmeal
1 c. + 3 tbsp. wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
1 egg or 2 egg whites, beaten
2 c. milk, combined, like 1 1/2 c. buttermilk & 1/2 c. yogurt
1/4 c. oil
1/4 c. honey

Stir together all the dry ingredients. Heat honey so it can be mixed well. Combine wet ingredients and blend together. Add wet to dry ingredients mixing only enough to combine the ingredients. Less mixing will make a more tender bread.

Bake in a large dish, 10"x6". Bake in greased dish at 350 degrees (325 degrees for glass) for 40 to 50 minutes. When you touch the center top, it should spring back or a tester should come out clean. Cut squares from out of pan and serve warm with butter and honey. Freezes well.
