MEXICAN WEDDING CAKES 
1 c. softened butter
1/2 c. sifted confectioners' sugar
1 tsp. vanilla
2 1/4 c. flour, sifted
1/4 tsp. salt
3/4 c. minced pecans

Mix together with your hands until well mixed. Roll into 1 inch balls or logs. Bake at 400 degrees for 10 to 12 minutes. When still warm roll in additional powdered sugar.

When cool, roll again in powdered sugar. Makes 4 dozen.
