BANANA SURPRISE MUFFINS 
1 c. flour
1/3 c. flour
2 tsp. baking powder
1/2 tsp. salt
3 c. Corn Chex cereal, crushed to make 1 c.
1 c. mashed bananas (2-3 ripe bananas)
1/4 c. vegetable oil
1 egg
1/4 c. milk
Jelly of your choice

Preheat oven to 400 degrees. Grease bottom of muffin pans.

Sift together dry ingredients and add cereal mixture. Beat together bananas, oil, egg, and milk, add all at once to dry ingredients and stir only until dry ingredients are moistened.

Spoon half of mixture in muffin cups, place 1/4 teaspoon jelly in each center and top with remaining batter. Bake 15-20 minutes or until lightly brown. Serve warm.

Makes 1 dozen muffins.
