BROCCOLI WITH HORSERADISH SAUCE | |
4 tbsp. melted butter 3/4 c. mayonnaise 1 tbsp. horseradish 1 tbsp. grated onion 1/4 tsp. salt 1/4 tsp. dry mustard 1 dash of red pepper 1 lg. fresh broccoli Combine all ingredients, except the broccoli. Refrigerate this sauce. May be kept for up to 1 month in refrigerator. (If it lasts that long!) Wash fresh broccoli and do not shake off the water that clings to it. Place in microwave ziploc bag and seal, leaving a 1/2 inch opening for steam to escape. Place in microwave for 6 minutes on high. Serve sauce over broccoli. For low cholesterol diets, I have omitted the butter and used part yogurt and part mayonnaise made with Hollywood safflower oil. Still rather good! |
