BROCCOLI WITH FRESH ORANGE SAUCE 
1 bunch fresh broccoli
2 tbsp. butter
2 tbsp. flour
1/2 tsp. grated fresh orange peel
1/2 c. fresh orange juice (preferably squeezed fresh from 2 med. oranges)
1/2 c. sour cream
1/4 tsp. dried leaf thyme
1/2 tsp. salt
1/8 tsp. pepper

Wash the broccoli, then remove and discard the large leaves and tough parts of the stalks. Separate the flowerets or cut into individual spears. Place in a large saucepan with 1/2-inch of boiling water. Cover and simmer for 10 to 12 minutes, until crisp-tender. Meanwhile, melt the butter in s small saucepan, then blend in the flour. Stir in the remaining ingredients, then stir over low heat until the mixture thickens and comes to a boil. Drain the cooked broccoli well, and serve with the orange sauce. Makes 4 servings.
