NORWEGIAN STYLE RICE PUDDING 
4 eggs, beaten
1/2 c. sugar
Dash of salt
1 tsp. vanilla
4 c. scalded milk
3/4 c. cooked white rice
1 c. raisins; optional

Mix eggs, sugar, salt, and vanilla. Add milk. Add rice and raisins if desired. Pour into a 1 inch deep baking dish. Set into another pan filled with water. Bake at 350 degrees for 20 minutes, stir and continue baking for another 25 minutes. Cool and serve.
