PORK CHOPS RISOTTO 
6 pork chops, 1/2" thick
Salt & pepper
2 tbsp. vegetable oil
3/4 c. uncooked rice
1/4 c. chopped onion
1/4 c. chopped green pepper
1 (15 oz.) can Italian tomato sauce
1 1/2 c. hot water
1/4 tsp. Italian seasoning
6 sm. slices mozzarella cheese

Sprinkle pork chops with salt and pepper. Brown in large skillet in oil. Remove and saute rice, onion and green peppers in dripping until rice is golden. Stir in Italian sauce, water and 1/2 teaspoon salt. Bring to a boil. Arrange chops in rice mixture. Sprinkle with Italian season. Cover simmer 35-40 minutes until tender. Adding cheese slices the last 5 minutes.
