APPLE MUFFINS 
1 c. peeled, apples, grated
1/4 c. brown sugar
1 c. flour
1 c. rolled oats
3 tsp. baking powder
1/2 tsp. salt
1 egg, beaten
3 tbsp. vegetable oil
1/4 c. raisins
1/2 c. milk

Preheat oven to 400 degrees. Stir together dry ingredients. Add rest of ingredients and mix only until moistened. Fill greased muffin cups 2/3 full. Sprinkle with 3 tablespoons brown sugar mixed with 1/2 teaspoon cinnamon. Bake 25 minutes.
