JALAPENO CORNBREAD 
1 c. yellow cornmeal
2 eggs
1/2 c. bacon drippings
1 c. cream style corn
1 lb. sausage
2-3 jalapeno peppers, chopped fine
1 c. milk
1/2 tsp. baking soda
3/4 tsp. salt
1 lg. onion, chopped
1 lb. yellow cheese, grated

Cook and drain sausage. Mix cornmeal, salt and soda. Add 2 eggs (beaten), milk, corn, bacon drippings, onion and peppers. Add sausage and cheese. Pour into large, 2 inch deep casserole dish (greased). Bake at 400 degrees until brown.
