APPLE CRUMBLE PIE 
1 c. sugar
2 tbsp. all-purpose flour
1 tsp. finely shredded lemon peel
6 c. thinly sliced peeled cooking apples (2 lbs.)
3 tbsp. lemon juice
1/2 c. all-purpose flour
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1/8 tsp. ground mace
1/4 c. butter

Prepare and roll out pastry. Line a 9" pie plate. Trim pastry 1/2" beyond edge, flute edge; do not prick.

In mixing bowl stir together 1/2 cup of sugar, 2 tablespoons flour, and lemon peel. Set aside.

Sprinkle apple slices with lemon juice. Toss apples with sugar mixture to coat. Turn apples into pastry lined pie plate. Combine the remaining 1/2 cup sugar, 1/2 cup flour, cinnamon, ginger and mace. Cut butter until crumbly; sprinkle on top of apple slices. To prevent overbrowning, cover. Bake at 375 degrees.
