ZUCCHINI-OATMEAL MUFFINS | |
2 1/2 c. flour Raisins and/or nuts 1 1/2 c. sugar 1/2 c. quick oats 1 tbsp. baking powder 1 tsp. salt 1 tsp. cinnamon 4 eggs, beaten 3/4 c. salad oil 1 1/2 to 2 c. ground zucchini Preheat oven to 400 degrees. In a large bowl, mix flour, raisins and/or nuts, sugar, oats, baking powder, salt, and cinnamon. In medium bowl, mix beaten eggs, oil, and zucchini. Stir liquid mixture into flour just until flour is moist. Batter will be lumpy. Spoon into greased and paper muffin tins. Bake 25 minutes or until toothpick comes out clean. Makes around 30 or a few more. Can be frozen. |
