ZUCCHINI MUFFINS 
2 1/2 c. flour
2 extra large eggs
1 1/4 c. sugar
3/4 c. plus 2 tbsp. corn oil
2 1/2 c. grated zucchini
2 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
2/3 c. chopped pecans

Preheat oven to 350 degrees. Combine all dry ingredients in large mixing bowl; add eggs (slightly beaten), oil and vanilla. Mix well, add zucchini, and mix thoroughly. Fold in nuts. Pour batter into greased and floured muffin tins. Bake 20 to 25 minutes. Makes about 18.
