ZUCCHINI BREAD 
3 eggs, beaten
2 c. sugar
1 c. Crisco oil
3 c. flour
2 tsp. baking soda
1/4 tsp. baking powder
2 tsp. vanilla
1/2 c. chopped nuts, optional
1 1/2 tsp. cinnamon
1 tsp. salt
3/4 tsp. nutmeg
1 (8 oz.) can crushed pineapple, drained
3 c. shredded zucchini, peeled

Beat eggs, sugar, oil and vanilla. Stir in all other ingredients and mix well. Pour into 2 greased and floured loaf pans and bake at 350 degrees for 35-40 minutes. Do not overbake. Very good! Do not use mixer. Test with toothpick.
