GLAZED CARROT CAKE WEDGES 
1 1/2 c. all purpose flour
1 c. sugar
1 1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3/4 c. vegetable oil
2 eggs, slightly beaten
1 tsp. vanilla
1 1/2 c. (3 med.) finely shredded carrots
1 c. flaked coconut

Preheat oven to 350 degrees. In large bowl combine flour, sugar, baking soda, cinnamon and salt. Stir in oil, eggs and vanilla, until well mixed. Stir in carrots and coconut (batter is thick). Spread into greased and floured 9 inch round cake pan. Bake for 40 to 45 minutes.

GLAZE:

1 c. powdered sugar
3 oz. pkg. cream cheese, softened
1 tbsp. grated orange peel
1 tbsp. orange juice
