ZUCCHINI BREAD 
3 eggs
2 c. sugar
2 c. shredded zucchini or frozen, drained
1 c. oil
1 tsp. vanilla
3 c. flour
1/2 c. nuts, chopped (optional)
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves

Heat oven to 325 degrees. Grease bottom of pan (not oil). Beat eggs until foamy. Add sugar, zucchini, oil, and vanilla. Add remaining ingredients. Blend well. Pour in pans. Bake for 1 hour. 2 loaves or 24 muffins. Bake muffins for 15 minutes.
