CHEDDAR ZUCCHINI BAKE 
2 lb. thinly sliced zucchini
2 eggs, separated
1 c. sour cream
2 tbsp. flour
1 1/4 c. grated Cheddar cheese
6 slices bacon, cooked crumbled
1 tbsp. butter
1/4 c. fine dry bread crumbs

Cook zucchini until tender; sprinkle with salt and pepper. Combine egg yolks, sour cream and flour. Beat egg whites until stiff and fold into sour cream mixture. Place half zucchini into an 11 x 8 inch baking dish. Top half with sour cream mix and cheese. Sprinkle bacon over cheese and continue to layer. Bake at 350 degrees for 20-25 minutes. Serves 8-10.
