SHRIMP AU GRATIN 
6 slices French bread
1/2 c. mayonnaise
1/2 c. sour cream
2 tsp. fresh lemon juice
Dash salt
Dash cayenne pepper
1 lb. small shrimp, cooked and cleaned
8 egg whites
2 c. shredded cheese

Toast bread lightly on both sides. Mix mayonnaise, sour cream, lemon juice and spices. Fold in well drained shrimp. Separately whip egg whites until stiff and fold in cheese. Spoon shrimp mixture onto bread. Top with cheese mixture to cover shrimp. Bake at 475 degrees for about 10 minutes until golden brown. Serve immediately.
