CHEESE - PECAN WAFERS 
2 sticks butter, softened
2 c. sharp cheese, grated
2 c. flour, sifted
1 c. finely chopped pecans
1 tsp. salt
1/2 tsp. red pepper

Cream cheese with butter. Add flour, salt, red pepper and nuts. Mix well. Form into several 2 inch round rolls. Chill for at least 2 hours. When ready to use, cut in thin wafers and bake at 350 degrees for 10 minutes. (Watch carefully - don't let edges get too brown.) Yields: 60 or more.
