CHICKEN CASSEROLE 
4 c. cooked chicken or turkey (white meat)
4 hard boiled eggs, chopped
2 c. chopped celery
1 sm. jar pimentos, chopped
1 tsp. minced onion
3/4 c. mayonnaise
3/4 c. cream of chicken soup
2 tsp. lemon juice
1 tsp. salt

Combine all of the ingredients in a large casserole. Top with 1 1/4 cups crushed potato chips and 1 cup grated (mild Colby cheese). Set overnight. Bake at 375 degrees for 1 hour. Spread cheese then potato chips. Bake uncovered.
