MELISSA'S COMPANY CASSEROLE 
4 c. noodles (1/2 lb.)
1 lb. chuck meat
1 tbsp. butter
2 (8 oz.) cans tomato sauce
1/2 lb. cottage cheese
1 (8 oz.) pkg. cream cheese, softened
1/4 c. sour cream
1/8 c. minced scallions
1 tbsp. minced green peppers
1/4 c. melted butter

Cook the noodles in a large pot. Strain and set aside. Brown chuck in butter in a large skillet. Drain the meat, then add the tomato sauce. Remove from heat and set aside.

In a bowl, combine cheese, sour cream, scallions, and peppers. In 2-quart casserole spread half the noodles. Pour cheese mixture over noodles, add the rest of the noodles, and pour butter over the top. Last, add meat-tomato mixture.

Can be prepared ahead of time and refrigerated until baking time (not longer than 1 day). Bake 45 minutes at 375 degrees. Serves 6-8.
