ZUCCHINI NUT BREAD 
4 eggs
2 c. sugar
1 c. vegetable oil
3 1/2 c. unsifted flour
1 1/2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3/4 tsp. baking powder
1 c. chopped walnuts or pecans
1 c. raisins (optional)
1 1/2 tsp. vanilla
2 c. grated, peeled zucchini

In mixing bowl beat eggs, gradually adding sugar until well mixed. Add oil and beat. Mix dry ingredients and add alternately to egg and sugar and oil mixture together with zucchini in small amounts. Add walnuts or pecans, raisins and vanilla. Grease and flour 2 bread pans 9 x 5 x 4 inches. Bake at 350 degrees for 55 minutes. Cool 10 minutes before turning out.
