ZUCCHINI NUT BREAD | |
5 eggs 1 c. oil 1 tbsp. fresh lemon juice 2 tsp. vanilla 3 c. flour 1 1/2 c. sugar 2 tbsp. cinnamon 2 tsp. baking powder 2 tsp. baking soda 1 tsp. salt 3/4 lb. zucchini, grated about 2 1/3 c. 1/2 c. chopped walnuts 1/4 c. dark raisins EGG WASH: 1 egg 1/4 c. milk Preheat oven to 350 degrees. Grease and flour 2 loaf pans. In large mixing bowl, beat eggs, oil, lemon juice and vanilla until yellow and foamy. In separate bowl, sift together flour, sugar, cinnamon, baking powder, soda and salt. Mix in zucchini, nuts and raisins. Gradually add to egg mixture, beating until smooth. Divide batter evenly between pans and bake until loaves begin to pull away from sides of pans, about 60 minutes. Mix egg wash ingredients and brush over tops of loaves. Return to oven until toothpick inserted into center of loaf comes out clean, about 5 minutes. |
