STUFFED ARTICHOKES 
4 fresh artichokes
3 cloves crushed garlic
1 c. seasoned bread crumbs
1/4 c. Romano or Parmesan cheese
Fresh parsley, chopped
Salt and pepper to taste
1/4 c. olive oil

Cut tops and points off artichokes with scissors. Wash and drain upside down. Mix all ingredients and divide into 4 portions. Stuff each artichoke with bread crumbs mixture, and place snugly upright into pan. Pour 1 cup water into bottom of pan. Pour 1 tablespoon oil on top of each artichoke. Cover and simmer slowly approximately 3/4 hour or until leaves are tender. Add more water while cooking if needed.
