BLACKBERRY ROLLY POLLY | |
DOUGH: 2 c. flour (sifted) 3 1/2 tsp. baking powder 1 tsp. salt 5 tbsp. shortening 1/2 c. milk 1 egg 1/4 c. sugar JUICE: 1 c. water 1/3 c. sugar (sugar water sweet) Butter, berries Mix flour, baking powder and salt. Rub in 3 tablespoon shortening with fingertips. Add milk and mix to a soft dough. Roll on flour board. Spread with 2 tablespoon shortening and berries and sugar accordingly (how tart your blackberries are). Roll up like jelly roll and cut like sweet rolls about 1 inch thick. Heat up water and sugar (don't boil) until sugar melts. Put some in buttered pan then lay rolls in water cover with the rest of the juice before putting in oven. Bake at 350 degrees for 30 to 40 minutes (keep watch). Serve warm with milk poured over. |
