OLD FASHIONED VIRGINIA PEPPERED
HAM
 
1 large smoked Virginia Ham
1 tablespoon dry mustard
2 tablespoons brown sugar
1 tablespoon cracked black pepper
2 tablespoons honey
1/4 cup bread crumbs
cloves (optional)

Soak ham in a large pan with enough cold water to cover for 24 hours in a cool place. The following morning, scrub the ham using a new natural fiber scrub brush.

Boil the ham for 1 or 2 hours, then remove the skin (cut through the fat under the skin and pull it away from the ham).

Combine remaining ingredients (except cloves).

Cover the top of the ham with the bread crumb mixture. Make criss-cross diamond shape incisions into the ham using a sharp knife. The centers of each diamond may be studded with a whole clove, if desired.

Bake the ham at 15-18 minutes per lb. at 325°F (or 140°F internal temperature).

Note: If you prefer a sweeter ham, use more sugar or honey in the mixture.
