ARROZ CON POLLO 
1 chicken, cut up
2 c. rice
3 tbsp. olive oil
2 buds garlic
2 onions, chopped
2 sweet peppers, chopped
1 tomato, chopped
1 1/2 c. dry white wine
Large pinch saffron
Pimentos and peas for garnish

Brown chicken and garlic in oil until golden. Add onions, peppers and tomato. Add rice, uncooked, and toss so that all ingredients are evenly distributed. Add wine and enough water to just barely cover. Add saffron, salt and pepper and cover pot. Simmer until rice is fluffy and chicken is tender, adding more water if needed. Garnish with peas and pimento.
