ARROZ CON POLLO (CHICKEN AND
RICE)
 
Chicken parts (legs and thighs)
Saffron
Olives
Capers
Red pimento peppers (1 bottle)
Cilantro (similar to thyme but ask for it at the Korean store)
Rice

Season the chicken with your spices. Add a little cilantro (this gives the Latin flavor). Saute the chicken in very hot oil. Add onions and turn the chicken in the oil until it becomes yellow like the cilantro. Add uncooked rice and water. Stir until the rice becomes yellow. Add some saffron. Make sure you get a pretty yellow color.

After stirring, add olives, capers, sliced pimentos. Stir; do not cover the pot. Let it soak. After all the water has been absorbed, cover the pot and lower the flame. Check for soft or grainy rice depending on your liking.
