GRAHAM CRACKERS
1 c. graham or whole wheat flour
1 c. all-purpose or unbleached flour
1 tsp. baking powder
1 tsp. salt
1/4 - 1/2 c. butter
1/4 c. honey
1/4 c. milk

Preheat oven to 400 degrees. In a large bowl, combine the flours with the baking powder and salt. Using a pastry blender or two knives, cut in butter until the mixture looks like coarse crumbs. Stir in honey. Add milk, a little at a time, until dough becomes stiff (may require a little more or a little less than 1/4 cup of the milk). Sprinkle flour on a pastry cloth or board. Roll out the dough very thin, no more than 1/4" thick. Cut into 3" squares. Prick the surface of each square with a fork. Brush each square lightly with milk. Bake on ungreased baking sheet for approximately 18 minutes, or until golden brown. Cool thoroughly on wire racks and store in a tightly covered container. Makes 1 dozen crackers.
