ZUCCHINI CASSEROLE 
2 lbs. zucchini, cut into slices, peel on, if tender
1 sm. onion
1 (8 oz.) pkg. Velveeta cheese, cubed
1 can cream of chicken soup

Butter crumbs on top. Layer zucchini, meat (browned), onions and cheese. Pour soup over top. Bake at 350 degrees for about 1 hour. Enjoy!
