ZUCCHINI PANCAKES 
3 lg. zucchini, grated and drained well
2 eggs
3 tbsp. flour
2 tbsp. Parmesan cheese
1 tsp. chives, chopped
1 tsp. parsley, chopped
2-3 pinches garlic powder
Salt and pepper to taste

Mix zucchini with eggs, flour, cheese and seasonings. Heat about 2 tablespoons oil in a large skillet and drop batter in skillet by tablespoonfuls, forming small pancakes. Brown lightly on each side.

Pancakes may be prepared several hours in advance and reheated in a 350 degree oven before serving. May also be frozen and reheated.
