CHEESE MEAT LOAF 
1 egg
1 lb. ground beef
1 c. coarsely crushed saltine crackers
1/4 c. chopped green pepper
1/4 c. finely chopped onion
1 1/4 tsp. salt
1/2 c. grated cheddar cheese
1 1/2 tsp. Worcestershire sauce
1 tsp. sugar
1 c. tomato juice
1/8 tsp. pepper
Parsley

Start oven 10 minutes before baking. Set to moderate (350 degrees). Break egg into mixing bowl. Add remaining ingredients, except parsley. Mix lightly, but thoroughly.

Turn meat into a greased 6 1/2 x 11 x 1 1/2 inch pan. Pat the mixture into a meat loaf shape, about 9 inches long and 4 inches wide. Bake to a rich brown, 45 to 50 minutes, or until no red juice runs out when pricked with skewer in center. Remove to a platter and garnish with parsley.
