CHEESE VEGETABLE MEDLEY 
1 bag combination vegetables, thawed and drained
1 can cream of mushroom soup
1 c. grated cheese, Swiss or mozzarella
1/3 c. sour cream
1/4 tsp. pepper
1 sm. jar pimento
1 can French fried onions

Combine vegetables, soup, 1/2 cup cheese, sour cream, pepper, pimento and 1/2 can onions. Place into casserole and bake uncovered for 30 minutes at 350 degrees. Top with remaining cheese and onions, bake another 5 minutes.
