HIGH IN THE SKY APPLE PIE 
5 cooking apples
1/2 c. brown sugar
3/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 1/2 oz. (3 tbsp.) Bourbon
Butter
All purpose flour
2 (9 inch) pie crusts, homemade or frozen, unbaked
1 egg yolk (optional)
Cinnamon sugar

Peel, core and thinly slice the apples. Place in a bowl with the brown sugar, cinnamon, nutmeg, and Bourbon and let stand 1/2 an hour. Dot the bottom of one of the pie crusts with butter, and add a layer of apples. Dot again with butter, sprinkle with some flour if you have too much syrup from the apple mixture, and add remaining apples. Cover with the second crust, seal the edges with the tines of a fork. Pierce the top crust in several places, brush lightly with egg yolk, and sprinkle with cinnamon sugar if so desired. Bake in a 400 degree oven for 50 minutes. Serve hot or cold. Serves 6.
