ZUCCHINI CASSEROLE 
2 to 3 med. size zucchini
1/4 c. butter
1/4 c. milk
Velveeta cheese
1/4 c. diced onion
Ritz crackers
1/2 c. melted butter

Cut up zucchini into small pieces. Add onion. Place in a large baking dish. Microwave on HIGH until tender. Drain. In a separate bowl, mix 1/4 cup butter, milk and cheese. Microwave until melted. Pour on zucchini and mix well. Top with Ritz crackers and melted butter. Bake at 350 degrees for 20 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
