CARROT-RAISIN SALAD 
1/2 c. light or dark raisins
1 lg. orange
1 1/2 c. grated raw carrots
1/4 c. mayonnaise or cooked salad dressing
1 tbsp. fresh, frozen or canned lemon juice
1 tsp. sugar
1/4 tsp. salt
Lettuce

Over raisins, pour boiling water to cover; let stand 5 minutes; drain; cool. Pare, then cut orange into sections, then cut sections into cubes; add to raisins with carrots. In small bowl, combine mayonnaise with lemon juice, sugar, and salt. Toss with carrot mixture. Serve on lettuce. Makes 4 servings.
