FRENCH POTATO SOUP 
4 med. potatoes
1 med. onion
2 tbsp. oil
4 c. chicken stock
1 c. milk
1 c. water

Saute onion in oil until soft. Add potatoes (peeled and cubed) and chicken stock. Cover. Simmer until tender. Add milk and water, salt, and pepper to taste. Return to low heat; stir often (using wire whisk) until desired consistency. Serve hot or cold. Yield: 6 cups.
