ZUCCHINI SQUASH PICKLES 
Cut up 7 pounds squash. Slice long way. Slice off seeds. 2 gallons water

After you slice squash, add to lime and water mixture. Soak 24 hours. Take out and rinse 3 times. Place in ice and water overnight. 2 qt. sugar 2 tbsp. celery seed 2 tbsp. mustard seed 3 tbsp. salt 2 tsp. dill seed 3 tsp. turmeric 1 tsp. red pepper 4 cloves garlic, sliced thin

Mix together, add squash and let soak overnight. Bring to boil hard for 20 minutes. Put in jars and seal. Yield: about 5 quarts.
