CHICKEN CORDON BLEU 
4 slices lg. boneless chicken breasts
4 slices of ready to eat ham (thin)
4 slices of Mozzarella cheese
Seasoned flour for dipping (salt, pepper, dry mustard, paprika, flour)
2 eggs, beaten
2 c. SOFT bread crumbs (from French bread)
Oil for frying

Flatten chicken fillet with mallet into oblong shape. Sprinkle with seasoned flour, lightly. Place ham and cheese on top of chicken, fold over and shape into oblong cutlet. Place on wax paper and freeze 1 to 2 hours. When ready to cook, dip in seasoned flour and into egg mixture, then into soft bread crumbs. Cover well with the bread crumbs then fry in hot oil, turning over several times until done (about 5 to 7 minutes). Keep in hot oven (350 degrees) until serving time.
