APPLE-SNAP MUFFINS 
1/2 c. butter
1/2 c. sugar
2 eggs
2/3 c. molasses
1 1/2 tsp. baking soda
3/4 tsp. cream of tartar
3/4 tsp. salt
1/2 tsp. nutmeg
1/4 tsp. cloves
1 1/2 c. grated unpeeled apple
2 c. sifted flour
1 tsp. ground ginger
1/2 tsp. cinnamon
1/3 c. milk
1 c. raisins

Cream butter, sugar and eggs. Add molasses. Stir. Add soda, cream of tartar, salt and spices. Stir. Add apples and milk. Stir. Add flour a small amount at a time, stirring as you add. Add raisins. Stir in. Put in muffin cups 2/3 filled. Bake 25-30 minutes at 350 degrees. Miniature muffins - bake 15 minutes.
