MOZZARELLA MEAT LOAF 
2 lbs. ground beef
1 (8 oz.) can tomato sauce
1 sm. onion, sliced in thin slices
1 (8 oz.) pkg. Mozzarella cheese
1/4 c. bread crumbs
1 egg
1 sm. can mushrooms, sliced
1 sm. can olives, sliced
Green pepper (optional)
3 to 4 slices American cheese
Basil, oregano, and garlic (to your taste)

Combine meat, tomato sauce, bread crumbs, egg, and seasonings. Divide in half. Pat first half in dish. Use 3/4 of Mozzarella, mushrooms, browned onions, peppers, olives, and slices American cheese; layer. (Remember onions sliced in very thin rings.)

Pat remaining meat mixture carefully over everything. Top with remaining cheese, mushrooms, onions, peppers, and olives. Cook at 350 degrees about 1 hour in 8 x 8 x 2 inch pan or dish.
