EGG CASSEROLE 
1 1/4 c. chopped ham, Canadian bacon
1/4 c. chopped green onion
3 tbsp. butter, melted
12 eggs, beaten
1 (4 oz.) can sliced mushrooms, drained
1/4 c. melted butter
2 1/4 c. soft bread crumbs
1/4 tsp. paprika
Cheese sauce

Saute ham and green onions in 3 tablespoons butter in a large skillet until onions are tender. Add eggs. Cook over medium heat to form large soft curds. Pour into a greased 13"x9" pan. Combine 1/4 cup butter with bread crumbs. Mix well. Put on top of egg mixture. Sprinkle with paprika. Cover and chill overnight. Bake, uncovered in 350 degree oven for 35 to 40 minutes. Serves 12 to 15.

CHEESE SAUCE:

4 oz. shredded American cheese
2 tbsp. butter
2 1/2 tbsp. all-purpose flour
2 c. milk
1/2 tsp. pepper
1/2 tsp. salt
