BAKED LEMON PUDDING 
3 tbsp. butter
3 egg yolks, beaten
Grated rind of 1 lemon (optional)
Juice of 2 lemons
1 c. sugar
1 1/2 c. milk
3 tbsp. flour
3 egg whites, beaten

Cream butter and sugar. Add beaten egg yolks (grated rind of lemon, optional), juice and mix. Add flour and milk and mix. Fold in beaten egg whites. Pour into greased baking pan. Set in pan of hot water and bake in moderate over for 45 minutes.

A delicate cake like layer forms on top and pudding supplies it's own sauce. Serve either hot or cold. Either plain or top with whipped cream and a cherry.

Serves 7.
