BENEDICTINE SANDWICH SPREAD
 
2 pkg. cream cheese (3 oz. size)
Grated pulp of 1 med. peeled cucumber
1 sm. grated onion
1/4 tsp. salt
Mayonnaise
2-3 drops green food coloring
Dash of Tabasco
1 loaf Pepperidge Farm thin white bread

Mash the cheese with a fork. Work into them the cucumber pulp, first extracting the juice by placing the pulp in a napkin and squeezing it fairly dry.

Add the onion, Tabasco, salt and enough mayonnaise to make a smooth filling, easily spread. Last of all, add the green food coloring - just enough to give a faint green tinge, for too much will look unappetizing.

Cut the crusts off bread and cut each slice into fourths. Spread with Benedictine Spread. Yield: 50 servings.

This is very similar to the recipe I use and I adore it. However, I can't imagine how thin a layer would be need to create 50 sandwiches. I may put my filling on thick, I want to taste it and not the bread but still can't imagine squeezing 50 out of this recipe. I just wanted to report that in case someone hadn't pretested the recipe and it's for a part. One gets 4 mini sandwiches out of 1 full size sandwich. I get a total of 12 - 16 tea sandwiches when I make mine. Also, I find it more flavorful to put the mayonnaise on the bread and not into the filling. This is a very adaptable "make it your own" recipe. One could add grated bell pepper, for example, or jalapenos, radishes, grated carrots, etc.. Horseradish, sour cream, whatever suits your taste. I like it the basic way and I seem to be rambling so I'll stop now.

A couple of comments about this great sandwich spread is the amount of onion used in the recipe. Waaaaay too heavy in my opinion. I used only 1/4 of a small onion and it turned out fine. As with other comments, I like my spread thick...particularly on a toasted bagel for breakfast, so attempting 50 sandwiches from the recipe seems almost impossible. I top the spread with homemade Nova Lox for breakfast.

2 tablespoons finely minced onion is plenty. Remove the cucumber seeds. A food processor does a good job. Tabasco or Worcestershire, either one works.Just don't put too much, 1/2 teaspoon Worcestershire is plenty. Miss Jennie was from Louisville and we Kentucians have been making these for decades. We prefer medium amount, not thin. Wonderful!!!
