GIANT OAT COOKIES 
1 1/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
2 1/2 c. quick oats
1 c. butter
1 c. creamy or super chunk peanut butter
1 c. sugar
1 c. packed brown sugar
2 eggs
1 tsp. vanilla

In medium bowl combine flour, baking powder, baking soda, salt and oats. In large bowl with mixer at medium speed, beat butter and peanut butter until smooth. Beat in sugars until blended. Beat in eggs and vanilla. Add flour mixture, by hand, mix until well combined. Shape into 2 inch balls. Place 6 balls on ungreased cookie sheet; flatten each to 3 inch diameter. Bake at 350 degrees for 15-17 minutes or until golden. Remove from cookie sheet; cool on wire rack. Store in tightly covered container. Makes about 24 cookies.

Option:

Add Chocolate Chips to 1/2 of the recipe.
