CHOCOLATE CHIP OATMEAL COOKIES 
1 1/4 c. softened butter
3/4 c. packed brown sugar
1/2 c. sugar
1 egg
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
3 c. quick or old fashioned oatmeal
12 oz. pkg. chocolate chips
3/4 c. chopped nuts

Heat oven to 375 degrees. Beat together butter and sugars until light and fluffy. Beat in egg and vanilla. Gradually add combined flour, soda and salt, mixing until thoroughly blended. Stir in oats, chocolate chips and nuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake 9 to 11 minutes. Cool 1 minute on cookie sheet and remove to wire rack. Store in tightly covered container. Makes approximately 6 dozen cookies.
